Executive Chef Eric Edwards

Born in North Vancouver, Executive Chef Eric Edwards was raised and found his inspiration for all things food here on Vancouver Island. He recalls fond memories of cooking with his mom and making cookies, lots and lots of cookies. Many of the recipes that Chef Edwards holds near and dear to his heart come from classic family recipes he's gathered throughout his career. It's not difficult to see where the inspiration for Cedars Restaurant & Lounge came from. Like most talented Chefs, he has selected the best aspects of his experiences - be it childhood comfort foods, searing great steaks at the Keg n Cleaver, preparing seafood specialties at Chandlers in Victoria, to preparing rustic dishes with a contemporary spin at Cedars Restaurant & Lounge. What Chef Edwards knows to be true: "It's about creating delicious food with fresh, clean flavours, maintaining the integrity of the ingredients, and caring about who you're preparing the dish for so that their culinary experience is special!” When you meet Chef Edwards, you understand where his passion comes from - he loves to see everyone feeling completely satisfied, smiling and looking forward to the their next visit to Cedars!
